Aloo Paratha:

Prepare a chapati-like soft dough using wheat flour, water, oil, and salt as per the taste. Cover the dough and allow it to rest for a while. Then mash the boiled potatoes and add salt, a pinch of turmeric, red chili powder, and other spices and mix them together. Make softballs of the dough, roll them out to a 4-inch flat disc, and stuff a generous amount of mashed potato mixture into the rolled dough. Cover the mouth of the dough and delicately roll the same. Fry this paratha on the medium-hot pan and add some ghee or oil and your favorite Aloo Paratha is ready.

Phiki Mathri:

Made from refined flour and salt, this is a deep-fried delicious Punjabi snack. All you need is maida, baking soda to which lukewarm oil/ghee is added. Now gradually add warm water to the flour and knead it to a puri-like dough. Cover it with a damp cloth, rest for a while, and on the other hand, heat a pan with oil for frying the Mathri. Now make small balls of the dough and roll them into 3–4-inch circles. Once done, fry all of them on low heat till they turn golden on both sides to get a crispy piece of Mathri.

Palak Paneer:

This is one of the most loved recipes that tantalize the taste buds of every Indian. Here is a short and sweet recipe you can try out of Karwa Chauth. Take the washed spinach leaves and blanch them in hot water for about 5-10 minutes and remove. Once cooled down, blend it to a puree and cut paneer cubes on the other hand. Then add oil to a hot pan, tomatoes, cashews, spices, and make its paste once cool. Transfer the same to a hot pan with oil and add salt, additional dry spice powders and cook. Finally, add the paneer cubes, simmer for a minute and then serve with a dazzle of cream.

Dry Fruits Ladoo:

Extremely easy to make, this Ladoo which is another main item in Karwa Chauth Sargi Thali. To make this power-packed food item, all you need is a coarse powder of all the dry fruits like almonds, cashews, raisins, pistachios, dry dates, figs, desiccated coconut. Also, add a teaspoon of cardamom powder for some extra flavor. Then add some lukewarm ghee into the mixture and then gently shape them into balls.

Kesari Feni:

Kesari Feni is a good source of calcium. To begin, firstly soak saffron strands in 2 spoons of milk, and on the other hand, heat a pan, add ghee & Feni and saute. Also, fry dry fruits in the ghee and keep them aside. Then boil milk in another pan and simmer till it thickens. Add sugar, saffron, mix well and turn off the stove. Garnish with dry fruits and serve.
